This is 20 gauge 304 stainless steel. The pan overhangs the manifold approximately 1/2". It sits on top of the manifold to prevent grease from getting inside the manifold, which prevents flare-ups. It is also very easy to remove and clean, and helps preserve the manifold. This also can be used as a waterpan to help keep moisture in the cooking chamber.
I do recommend still using a foil drip pan (for long cooks) on top of this pan. The foil drip pan will sit on top of the Hybrid without waterpan brackets without issue.
Compare this ($130) with the cost of the 3 things it’s replacing:
1) Manifold cover w/ grease lip ($70)
2) Four waterpan brackets ($40)
3) Waterpan ($90)
These 3 items total $200 vs $130.
